This amazing vegan creamy white gnocchi soup recipe is so mouthwateringly good it should probably come with a warning. It’s addictively delicious and became an instant family favourite when I created the soup. Think creamy, cheesy, garlicky soup loaded with spicy peppers and delicious gnocchis. It’s so good I don’t even have words to describe it other than “Yum”.

This creamy vegan gnocchi soup taste sinfully good, but it’s actually healthy and loaded with nutrients, vitamins and minerals. And it’s a ready to eat in under 30 minutes easy vegan dinner recipe. It doesn’t get much better than that.

When I first came up with this recipe I had no idea just how much everyone was going to love it. I have never been the biggest fan of soups, but I decided I wanted to create some soups that even I would love. Of course I had to test it out on my other non-soup-loving friends and family members to see if it truly passed the test. And boy did it ever. This gnocchi soup was an instant hit and every last drop of it was quickly devoured with lots of accompanying mmm sounds. That’s when I knew I was on to something.

What kind of gnocchis should I use for this vegan gnocchi soup?

You can use your favourite homemade gnocchi recipe or if you are in the mood for a quick and easy dinner, you can buy gnocchis at the grocery store. Both options work equally well. 

There are lots of different gnocchis options out there and they all work amazing in this recipe. For me, I like to use gnocchis made with lots of herbs, but you can just as easily use plain gnocchis, or any type of gnocchis you prefer. 

Meal prep friendly vegan gnocchi soup

Yes, you read that right. This creamy vegan gnocchi soup is actually meal prep and freezer friendly. I like to make a double (and sometimes triple batch) and freeze this soup for later. It just makes life that much easier on a busy day. Just take it out of the freezer when you are ready to eat, and defrost it in the microwave or let it melt at low heat in a pot. It’s super simple and easy to make and a great way to get a healthy meal on a hectic day. 

Gluten free option

To make this gnocchi soup gluten-free you have to use gluten-free gnocchis. You can either make your own gluten-free gnocchis, or you can buy ready made gluten-free gnocchis at the grocery store. The last option is the quickest, but both work equally well. 

How is this delicious vegan creamy white gnocchi soup made? It’s so easy. Just:

  • Heat olive oil in a pan and add the onion and diced veggies. Season with salt and oregano. Add the minced garlic.
  • Let everything cook for 5 minutes while stirring occasionally. Pour in the vegetable stock and coconut milk and bring to a boil. 
  • Next, add the gnocchis and cook at a simmer for 10 minutes until the gnocchis are ready. Top with fresh parsley and serve.

  • 1 Yellow Onion Diced
  • 1 Red Bell Pepper Diced

  • 8 Black Olives Sliced and pits removed
  • 1 cup Vegetable Stock
  • 2 cups Coconut Milk
  • 1 tbsp Nutritional Yeast Optional
  • 1 bunch Fresh Parsley Chopped
