Although this Greek pasta recipe is defined by it’s creamy feta cheese, it’s actually easy to make in into a vegan recipe. Just substitute the feta cheese with silken tofu or cashew cheese and you will get most of the same cooling creaminess that the feta cheese has. 

How to make this Tiktok favourite easy Greek Tomato Feta pasta recipe:

Instructions

  • Preheat the oven to 350F.
  • Place the feta cheese in the middle of a baking pan and pour the rinsed tomatoes all around them. Drizzle generously with olive oil over the feta and tomatoes. 
  • Next, season with dried oregano, salt and freshly ground pepper and bake the tomatoes and feta in the oven for 30-40 minutes or until the tomatoes are mushy and starting to go dark in a few places.
  • While the tomatoes are roasting in the oven, cook the pasta as instructed on the pasta bag. Once the tomatoes look done, take the pan out of the oven. Being careful not to burn yourself, use a fork to mash the tomatoes and feta cheese together with all the spices and olive oil. Pour the cooked pasta and the tomato/feta mash into a large mixing bowl and mix together until all the pasta is coated with the creamy tomato mixture.Serve hot and enjoy.
