Do I have to use white asparagus for this recipe?
No, you can just as easily swab out the white asparagus for green asparagus. Any type of asparagus works well in this recipe. The white asparagus has a different taste with a lemony hint. But the green asparagus is also amazing in this dish. If you use green asparagus just know that it cooks a little quicker and will need less time to grill.
Cannellini or butter beans – what should I use?
In my original recipe I like to use cannellini beans, because they are the original Mediterranean choice and this recipe is all about harnessing those Mediterranean flavours. But I know getting cannellini beans isn’t always that easy… luckily you can just as easily use butter beans. Butter beans has the same creaminess and adds all those same flavours to the dish as cannellini beans. So if you can’t get cannellini beans just swap them out with butter beans.
Meal prep options
You can’t make the asparagus in advance, but you can absolutely prepare the butter beans and tomatoes. If you want to make the tomato/beans topping in advance, just make them as the recipe describes. Once they are cooked, put the tomato/bean topping and all the juices into a airtight container and place them in the refrigerator. Once you are ready to make reheat them, simply heat the oven to 400F and pour the toamto/beans topping and juices into a oven safe pan. Cover with tinfoil and reheat the dish in the oven for 15-20 minutes. You may need to add a little more olive oil before serving.

- While the tomatoes are cooking, begin preparing the asparagus by cutting off 1-2 inches off the end before peeling the skins of the white asparagus with a peeler. Next, heat a grill or a grill pan.Season the asparagus with salt and pepper and place them on the grill. Let the white asparagus cook until they are nice and golden brown. Flip them over and let them cook until all sides are golden.
- Melt the butter in a pan and add the finely chopped garlic. Let the garlic cook in the butter for 1-2 minutes before removing from the heat.
- Once the asparagus are cooked, remove them from the grill and place them on a plate. Drizzle garlic butter over the grilled asparagus.Top with a generous spoonful butter beans and tomatoes and serve with a drizzle of olive oil and fresh basil. Serve and enjoy.

- 1 15oz can Butter Beans Rinsed and drained
- 5 large Tomatoes
