Easy Pizza with Pesto and Roasted Peppers (vegetarian)

This easy roasted peppers and pesto pizza is one of my favourite mouthwateringly good vegetarian pizzas. And it can easily be made vegan by making just a few simple adjustments. 

The roasted bell peppers adds a sweet spiciness that’s enhanced by the creamy coolness of the feta cheese and the fresh basil. 

This budget friendly pizza is bright and summery and made almost entirely out of kitchen stables. This might just be the best (and easiest) vegetarian pizza ever. 

All you need to make this Easy Roasted peppers and pesto pizza is:

  • 1 pizza dough
  • Eggplants
  • Pesto (Homemade or store-bought will do fine)
  • Red bell peppers
  • Red onion
  • Pine nuts (optional)
  • Feta cheese (for vegan version see substitutions below)
  • Fresh Basil

Meal prep friendly pizza 

This super easy roasted peppers and eggplant pizza is incredibly delicious, simple to make and meal prep friendly. You can make the entire pizza in advance and freeze it for later. I like to wait with adding the feta cheese topping for meal prep because feta cheese doesn’t do too well with being frozen. But as long as you add the feta cheese (or vegan cheese substitute) right before reheating the pizza it turns out amazing. 

Vegetarian Pizza dough

You can make your own pizza dough (check out my favourite vegetarian pizza dough recipes here, including my quick 15 minute pizza dough recipe and my original Italian pizza dough recipe).

Or you can just as easily buy a ready to use pizza dough at the grocery store and save yourself the work. Any pizza dough will do – although I personally like to use my quick 15-minute pizza dough recipe if I have the time. 

Vegan Easy Roasted Peppers and Pesto Pizza version

Changing this pizza from a vegetarian pizza to a vegan pizza is very easy and can be done in several ways. 

You can replace the feta cheese with silken tofu or your favourite vegan cheese. I also like to use a vegan cashew cheese as a substitute, but you can use any type of vegan cheese you prefer or even leave it out altogether. The great thing about this recipe is that it doesn’t rely on the cheese for flavour. It’s all about the pesto and the veggies.

So how is this easy roasted peppers and pesto pizza made? It’s so easy:

Instructions

  • Preheat the oven to 400F.
  • Line a baking tray with baking parchment and set aside.
  • Cut the ends off the eggplants and slice into thin slices. Brush the eggplant slices with olive oil and season with salt and greek spice mix. 
  • Next, heat a grill pan or grill and place the eggplant slices on the hot grill. Grill the eggplants for 3 minutes each on both sides or until they start to soften and become golden. Remove the eggplants from the grill and set aside. 
  • Next, slice the bell peppers into 1-inch slices and place them on the hot grill. Grill the peppers for 3-5 minutes on each side or until they start to soften and char in a few places. Remove from the grill and set aside.
  • Place the rolled out pizza dough on the previously prepared baking tray and spread the basil pesto out evenly over the pizza. Place the roasted peppers and eggplants on the pizza and top with red onion slices, crumbled feta cheese and pine nuts over the top. Season with a pinch of salt. Bake the pizza in the oven for 15-20 minutes or until the pizza dough is ready. Serve with a drizzle of sweet and sour chili sauce and a garnish of fresh basil and enjoy.

  • 2 tbsp Greek Spice Mix
