Well, it’s a delicious portobello mushroom loaded with cheese (vegan or vegetarian) and pizza toppings and roasted in the oven for 20 minutes, before this mouthwatering masterpiece is slabbed between two burger buns, thus creating the best portobello pizza burgers ever…at least in my obviously humble opinion.

These portobello pizza burgers takes vegan burgers to a whole new level of yumminess. They are loaded with cheesy flavours, packed with juicy meat-like textures from the portobello mushrooms…and they are mouthwateringly irresistible – so get ready to make extra servings. 

When I first created these pizza burgers, I wanted a vegan or vegetarian burger that would knock anyones socks off (it can be either vegan or vegetarian, depending on the type of cheese you use). And this recipe delivered that and more than I had imagined. Everyone went nuts for my pizza burgers, and they were devoured quicker than I could make them. Which, of course, is the greatest compliment for any cook and is the reason I knew I had to share this recipe with you.

Vegan or vegetarian pizza burgers

Whether you want to make these delicious pizza burgers. Vegan or vegetarian is all up to you. It all depends on the type of cheese you use in the recipe. If you are making the vegan version, I recommend also sprinkling nutritional yeast on the burgers, to add extra cheesy flavours. 

Whenever I make these burgers vegan, I like to make it as simple as possible, and buy the exact vegan copycat cheeses…meaning vegan shredded mozzarella and vegan gorgonzola cheese. It just makes life a lot more simple – and just as delicious, if you ask me. 

If you have a favourite vegan cheese, you can substitute the mozzarella cheese with your favourite, to get the best results. 

How are these amazing portobello burgers made? It’s very easy. Just:

Instructions

  • Preheat oven to 350F and grease or line a baking pan with baking paper. 
  • Place the portobello mushrooms bottom side up and spread the garlic cream cheese on top. Next, spread tomato paste on top and add the shredded cheese. (If you’re making the vegan version, top with nutritional yeast at this stage).
  • Next, place the tomato slices on top of the portobello mushrooms and season with salt, pepper and oregano. Top with crumbled gorgonzola cheese (vegan or vegetarian). 
  • Bake the portobello mushrooms in the middle of the oven for 20 minutes or until the mushrooms are cooked through and the cheese have melted and started to turn golden brown. 
  • While the portobello pizza steaks are roasting, lightly grill your burger buns. Once the burger buns are ready, spread vegan mayonnaise and pesto on each bun. Add your salad toppings of choice and place the portobello pizzas in the middle of the burgers. Assemble your burger and enjoy.

Ingredients

  • 4 Burger Buns
  • 4 tbsp Vegan Mayonnaise
  • 4 tbsp Pesto Vegan
  • 4 large Portobello Mushrooms Rinsed and stems cut off
  • 4 tbsp Vegan Garlic Cream Cheese
  • 4 tbsp Tomato Paste
  • ¼ cup Shredded Mozzarella Cheese Vegan or vegetarian
  • ¼ cup Gorgonzola Cheese Vegan or vegetarian
  • 1 tbsp Dried Oregano
  • Pinch of salt

Optional extras

  • 1 tbsp Nutritional Yeast vegan version
  • Mixed Salad
  • Your favorite burger toppings
