I have one very easy and simple vegan option for baked feta. To get the creamy texture and scoopable consistency that you get with regular feta cheese you need silken tofu. I find that silken tofu is the closest (very, very close in taste and texture) to feta when it’s baked. You want to add a little more flavorings to compensate for the savory feta taste and a generous drizzle of olive oil.

To make silken tofu taste like feta cheese you need:
- 1 pack silken tofu, excess liquid removed
- granulated dried garlic
- dried basil
- dried oregano
- sea salt flakes
- ground black pepper
- crushed nutritional yeast
- olive oil
- almond flour or meal

You can use almost any vegetable when you make baked feta. There are so many delicious combinations that I could probably talk about baked feta serving ideas for days. So, to quickly sum up some of my favorite options (because I’m sure you don’t have the time to listen to me going on and on about feta and veggies) here are my top picks:
Chickpeas – I know chickpeas aren’t a vegetable per se, but they are absolutely amazingly roasted with feta. Drain and rinse a can of chickpeas, quickly toss them with olive oil and smoked paprika and bake them along with your feta. You can thank me for the suggestion later.
Zucchini, squash, Or courgette – squash is one of the best easy veggies to roast. Just slice or dice the squash, drizzle with olive oil and seasoning and bake with the feta. Roasted squash is a no-fail option.
Tomatoes – you knew they were coming, and you were right. There’s nothing quite like oven-roasted tomatoes and creamy feta. It’s a match made in heaven.
Tips and tricks to baking feta
- Don’t cover the feta – I like to leave my feta and vegetables uncovered when I bake them because it makes the feta just lightly golden on top and turns the almond flour into a thin crunchy crust. Yum.
- Use an oven safe dish to bake the feta and veggies
- this easy Greek style Baked Feta recipe serves 4-6 people. For a smaller amount that fits 2 people just use a smaller baking dish and only use half the amount of ingredients.
- Use a good quality Greek Feta cheese. The cheese should have a creamy texture and be melty and not crumbly when it’s baked. Tip: I like to use feta that’s kept in brine because it keeps the cheese moist. Just drain away the brine before using the feta.
- If you can’t get a good quality Greek feta cheese, a good French or Bulgarian white cheese will usually work just as well. Or use silken tofu to replace the feta for a delicious vegan baked feta option.
- Serve the baked feta right away. The feta is best when it’s right out of the oven. Once the cheese cools down it will harden again and won’t be as deliciously scoopable.
