Loaded Vegan Pizza with Meatballs

This is a fully Loaded Vegan Pizza with Meatballs that will rock your world. It’s deliciously cheesy, packed with flavors and so decadent no one ever realizes it’s a meat free pizza.
For the meatballs I like to use my Italian style vegan meatballs, with my easy tofu meatballs or my High protein vegan meatballs. They are so meaty and delicious and fit right in with the Italian pizza seasoning.
This pizza is a fusion between Italian pizza and mexican flavors. It’s loaded with silky eggplants, savory bell peppers, sweet corn and amazing vegan meatballs. It’s so good, you have to try it to believe it.

Vegan Pizza dough

The great thing about pizza dough is that it’s usually always vegan – unless you like a cheese crust. I like to make my own pizza dough when I have the time, but at least half of the time, I admit to just purchasing a ready made pizza dough at the grocery store. It’s so easy, and cuts cooking time in half.
Whether you choose to make your own pizza dough or buy one that’s ready made, this recipe will make it taste amazing.

How is this vegan pizza made? It’s so easy:

Instructions

  • Preheat the oven to 450F.
  • Heat a skillet and cook the eggplant, garlic and bell peppers at medium high heat for a few minutes. Once the eggplant starts to soften, take the skillet off the heat and set aside.
  • Roll out the pizza dough into your preferred shape and place the pizza on a baking sheet covered in baking parchment (unless you have a pizza stone, which in that case just use that). Spread the marinara sauce evenly over the pizza dough, stopping ½ inch from the edges.
  • Lay the sliced mozzarella haphazardly over the pizza and top with the tomato halves.
  • Next, top the pizza with the sweet corn, sliced eggplant and sliced bell pepper. Season with salt and Italian seasoning (or a combination of dried oregano, dried thyme and dried basil).
  • Top with the vegan meatballs and finally sprinkle genrously with vegan shredded cheese.
  • Bake the pizza in the middle of the oven for around 15 minutes or until the pizza crust is ready.
  • Garnish with fresh basil and serve. Enjoy.

  • 1 Pizza Dough
  • ½ cup Marinara Sauce
  • 1 Vegan Mozzarella Cheese Sliced
  • ½ cup Cherry Tomatoes Halves
  • 1/3 cup Sweet Corn

  • ½ Red Bell Pepper Sliced
  • 2 cloves Garlic Minced
