Easy Vegan Teriyaki Broccoli Stew
This easy vegan Teriyaki Broccoli stew is loaded with flavours and made using only a few easy ingredients.
The seared broccoli becomes almost nutty in flavour and absorbs all the spices of the dish. This teriyaki stew is gluten free, soy free and made with only a few ingredients like broccoli, bell peppers, onions and fresh bamboo shoots.

Homemade Teriyaki Sauce
I like to use my own homemade vegan teriyaki sauce for this recipe (mostly because I usually always have it ready to use in my refrigerator)…It’s spicy, delicious and oh so tasty in almost any dish…but you can just as easily use a store bought teriyaki sauce if you prefer. Just make sure it’s gluten free if you are allergic to gluten before using it.
Using Bamboo shoots
The fresh bamboo shoots add a little extra acidity to the recipe…I like to use the canned bamboo shoots because they are usually pre-cooked and can be used straight away. If you can’t get canned or pre-cooked bamboo shoots you can either leave them out of the recipe or use fresh bamboo shoots.
If you plan to use fresh bamboo shoots, you will have to peel them, cut them into slices and pre-boil them for 20 minutes.
How to serve this Vegan Teriyaki Broccoli Stew
You can serve this stew with almost any type of side dish you prefer. I like to serve it with my favourite fluffy turmeric rice, because they add extra flavour and health benefits to the dish. But you can easily serve this vegan stew with:
- regular boiled rice
- creamy polenta
- mashed potatoes
- mashed sweet potatoes
- couscous
- quinoa
- bulgur
- Or even just a side of toasted bread for a rustic Italian feel
How to make my vegan Homemade Teriyaki sauce:
Add the tamari sauce, maple syrup, sweet and sour chilli cause and water to a bowl and whisk together to combine. Which in the minced ginger, minced garlic, chopped chives, toasted sesame sauce, ground cumin and rice flour, until everything is mixed well.
Pour the teriyaki sauce into a clean jar or bottle and keep in the refrigerator until ready to use.
Homemade Teriyaki Sauce
Ingredients
- ¾ cup Tamari Sauce
- ¼ cup Maple Syrup
- 2 tbsp Sweet and Sour Chili Sauce
- ¼ cup Water
- ½ tbsp Fresh Ginger Minced
- 1 tsp Garlic Minced
- 1 tbsp Chives Finely chopped
- 1 tbsp Tahini
- 1 tbsp Brown Rice Flour
- 1 tsp Ground Coriander
Instructions
- Add the tamari sauce, maple syrup, sweet and sour chilli cause and water to a bowl and whisk together to combine. Which in the minced ginger, minced garlic, chopped chives, tahini, ground coriander and rice flour, until everything is mixed well.
- Pour the teriyaki sauce into a clean jar or bottle and keep in the refrigerator until ready to use.

Instructions
- Heat olive oil in a large pan and add the broccoli florets. Let the broccoli cook at medium high heat while stirring occasionally for 4-5 minutes while they get a little seared at the edges. Once the broccoli starts tuning golden, add the diced peppers, diced onions, bamboo shoots and spices and stir together to combine. Let the veggies cook for 3-5 more minutes while stirring occasionally.
- Next, add the teriyaki sauce and the coconut milk and combine. Bring the sauce to a boil, before turning the heat down to a simmer. Let the dish cook for 5-10 more minutes at low heat and serve topped with fresh herbs. Enjoy.

- 1 Yellow Bell Pepper Diced

- 4 tbsp Teriyaki Sauce
- 1 tbsp Paprika
- 2 tsp Curry Powder
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 tbsp Sweet and Sour Chilli Sauce
- 1 bunch Fresh Cilantro or Fresh Basil Topping, chopped

What is sweet and sour chili sauce? I know sweet chili sauce and I know sweet and sour sauce but what is sweet and sour chili sauce?
Hi, sweet and sour chili sauce is a combination of those two sauces combined in one product (it tastes amazing). If you can’t find sweet and sour chili sauce at the grocery store, you can just use sweet chili sauce and add 2 teaspoons of sour sauce to get the same flavors 🙂
