This easy and delicious edamame hummus is amazing as a creamy, savory dip or as a vegan bread topping. This might just be the new just as healthy replacement for avocado toast. It’s made with simple ingredients that all pack a lot of flavour into the dish. Think edamame beans (soy beans), tahini, garlic and lots of spices.

Eaten as a dip with fresh veggie sticks and it turns into a calorie burning, high protein dish… but if you’re in the mood for a more unhealthy treat (I get it. We’ve all been there) you can scoop up the hummus with any type of chips or nachos you crave.

Edamame beans, or soy beans as they are also known, are amazing both served hot and cold. You can boil them, sauté them or even blend them like I do in this recipe. The great thing about edamame beans is their incredible versatility…and the fact that they are loaded with healthy nutrients also helps. They have a fresh, almost neutral taste in themselves, which makes them ideal to add any flavours you want. 

How to serve this easy vegan soy bean hummus

You can serve this colourful hummus as a dip or use it as a healthy and tasty spread on crackers, toast and wraps. This hummus adds an extra depth of flavour and spiciness to any dish.

  • Add the peeled edamame beans to a food processor (or use a bowl and a hand blender). Pour in the olive oil and water and process until the beans are creamy and has that hummus consistency. 
  • Next, add all the rest of the ingredients and stir together to combine. Add extra salt if needed and serve. Enjoy.

Ingredients

  • 2 cups (400g) Edamame Beans Ready to use
  • 2 tbsp Olive Oil
  • 3 tbsp Cold Water
  • ½ tsp Ground Cumin
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 3 cloves Garlic Minced
  • 2 tbsp Tahini or any nut butter like peanut or almond butter
  • 2 tbsp Lemon Juice
  • 3-5 Sun dried Tomatoes Chopped
  • Pinch of Chili Powder
