This easy fluffy coconut with turmeric rice recipe makes deliciously fluffy, flavourful and healthy rice. It’s a great way to serve rice that are just a little bit different and goes so well as a side dish with veggie stew, ragout or any type of dish where you would normally serve rice.

Rice is one of the easiest foods to cooks, but still a lot of people seem to struggle with it. And that’s where this life changing rice cooking hack comes into play. Truth be told, I never follow the cooking descriptions on the rice packaging, because I only use this trick…and it produces the best, fluffy rice every single time. 

Getting the best tender and fluffy rice is all about adding the right amount of liquid 

Cooking hack:

Rinse the rice and pour it into a large pot. Add 1 cup of coconut milk. 

Place your hand on top of the rice and add water until it just reaches your wrist (or what is around 1 1/2 inches of water above the rice level). Add a pinch of salt, because adding salt makes the rice cook a little faster and bring the rice to a boil. Turn the heat down until the rice simmers and allow to cook for 15 minutes while stirring occasionally. Once the water is almost absorbed, turn the heat off and put the lid on the rice to completely cover it. Let the pot of rice rest on the warm stove for 10-15 minutes as it becomes fluffy and tender. 

Give the rice a stir to fluff it a little before serving and enjoy. 

Can I substitute the coconut milk?

If you don’t like coconut milk or don’t have it in the house, you can easily just leave it out. Of course you need to replace the coconut milk with another liquid, and this can either be done by just swapping it with water or using another non-dairy milk. If you choose to swap the coconut milk with water, I always suggest adding 1-2 tablespoons of non-dairy butter to add more depth of flavour. 

Meal prep friendly

You can easily make this rice recipe in advance and reheat it in the oven later. Just add 1/2 cup extra coconut milk, cover the pan with tinfoil and bake in the oven at 350F for 30 minutes or until the rice is warmed all the way through.

  • 1 cup Rice
  • 1 cup Water
  • 1 cup Coconut Milk
  • ½ tsp Salt
  • 1 tbsp Ground Turmeric Powder
  • 1 tsp Ground Cinnamon optional
  • 1 tsp Paprika
  • ½ tsp Ground Cumin
