This easy 1-hour Focaccia Bread recipe taste like a slice of Italy – and if you ever end up with any leftovers, it’s also freezer friendly.
This recipe is for all the bread lovers out there. It’s quick to make, because it does it’s main rising in the oven and it’s so incredibly tasty.
Loaded with Italian seasonings and topped generously with olive oil to get that amazing crust focaccia is known for. It doesn’t get much better than this.

Focaccia is a huge family favorite and we serve it at every event, party and weekend dinner. There’s just something about those herby flavors that goes with any meal.

Although I adore homecooked bread, I don’t always have time to make it during the week. A typical bread recipe usually involves 1-2 hours of extra time for rising…and that’s just not always possible to get done. My usual shortcut bread workaround is to replace the yest with baking soda, but that also changes the flavor of the bread quite a lot.


Since part of the bread experience is that depth added by the yeast I googled around to find any solutions I could. The suggestions ranged from interesting to useful. After a couple of successful tests on various of my favorite bread recipes, the time had come to see if it worked on my Focaccia. That resulted in this amazing quick 1-hour Focaccia bread with herbs.

Okay, so if you’re like me, you probably think a little cheese makes almost everything better – and you’re not wrong. If you’re feeling extra and want a little cheesy flavor, you can add a sprinkle of parmesan cheese (if you’re vegetarian) or nutritional yeast (if you’re vegan). It’s a twist on the traditional focaccia and you won’t believe how incredibly tasty it is.

How is this Easy 1-hour Focaccia Bread with herbs recipe made? It’s so easy:

Prep 40 minutes
cook 20 minutes
serves 8

Preheat oven to 200F.
Grease a baking pan with olive oil and set aside.
Add water, sugar and yeast to a large mixing bowl and stir to combine.
Let the mixture sit for a couple of minutes to activate the yeast.
Next, add flour, salt and a tablespoon chopped rosemary to the bowl and stir to combine. Mix until the dough begins to pull away from the side and knew in 1 tablespoon extra flour at a time – the dough should be firm enough not to stick, yet still fairly soft.


Pour the dough into the greased baking pan and use your hands to spread it out evenly in the pan.
Turn off the oven and place the pan in the oven for 15-20 minutes (this will make it rise faster)

Next, remove the pan from the oven and turn the oven up to 400F.
While the oven is preheated, use your fingers to poke holes in the dough and drizzle olive oil generously on top. Sprinkle sea salt, garlic powder and rosemary on top of the bread.
Return the baking pan to the oven and bake the focaccia for 20 minutes or until it’s golden brown.
Serve and enjoy.

  • 1⅓ cup Warm Water
  • 2 tsp Sugar
  • 1 0.25 ounce Rapid Rise Yeast Packet (2¼ teaspoon)
  • All-purpose Flour Plus extra
  • 2 tsp Sea salt
  • 1 tbsp Chopped Fresh Herbs for dough Rosemary, Thyme or Oregano
  • 1 tbsp Chopped Fresh Herbs for topping Rosemary, Thyme or Oregano
  • 1 tsp Garlic Powder for topping
  • Flaked Sea Salt for Topping
  • ½ cup Olive Oil
