Can I use salted cashews to make vegan queso?
Sure. Just don’t add extra salt if you make queso with salted cashews. I find it easier to control the saltiness when I use roasted raw cashews in my queso, but salted cashews can absolutely work too.
I don’t have tahini. Can I leave it out?
Sure. If you don’t have tahini I recommend adding a little extra squeeze of lemon juice to help balance the acid in the queso.

- High-speed blender or food processor
- 2 cups Cashew Nuts Roasted
- 2 tsp Garlic Powder or 2 cloves minced fresh garlic
- 1 tsp Sea salt or Kosher Salt
- Juice from ½ Lemon
- 1 tbsp Tahini
- ¼ cup Nutritional Yeast
- 1¼ cup Cold Water
- Put all the ingredients into a blender or food processor and blend until the queso is creamy and everything is combined.
