  • 2 Zucchinis
  • cup Edamame Beans
  • 1 can Coconut Milk
  • ½ cup Silken Tofu
  • 1 handful Dill
  • 1 Lemon – juice from
  • Pinch of Salt
  • Pinch of Chili

Instructions

  • Rinse the squash and cut of the ends. Use a peeler to cut the squash into long thin slices of zoodles.
    Next, heat up a wok or a frying pan and pour the coconut milk into it. Heat up the coconut milk before adding the zoodles. Cook the zoodles at medium high heat for around 1 minute (make sure not to overcook them).
    Add edamame beans, salt, chili and lemon juice and stir quickly together. Break up the silken tofu and add it to the dish. Take off the heat and serve.
    Garnish with a handful of dill and enjoy.
