Banana Cake with Nuts and Chocolate

A lovely a spongy Banana cake loaded with nuts and chocolate – the cake and topping is made in one go, making this a simple one step cake.

I’m not always a fan of banana cake. It has a tendency to taste too much like bananas and often get a bad texture. This recipe isn’t like that at all.

One of the things I really like about this banana cake recipe is that it’s also loaded with nuts and chocolate – nuts, chocolate and bananas are a match made in food heaven. They compliment each other and brings out the best taste.

Most of the sweetness in this cake comes from the bananas and the brown sugar. Brown sugar has a deeper and darker flavor that works so well with bananas – it creates a wonderful and deep caramel like backdrop to all the other ingredients.

This banana cake is equally great whether it’s freshly baked or heated from the freezer. It has a great and spongy texture and tastes just as good the next day.
I will admit to eating a slice of this in the morning – who can resist a delicious slice of leftover cake? (definitely not me)

Serve it as is or with a dollop of sour cream and some fresh berries.

Banana Cake with nuts and chocolate

Delicious and easy to make Banana Cake packed with nuts and chocolate. Full of deep flavors and freezer friendly.

Ingredients

  • ½ cup Butter
  • 2 Eggs
  • 1/3 cup Caster Sugar
  • ½ cup Brown Sugar
  • 1 tsp Baking Soda
  • 1.3 cup Selfrising Flour
  • 1 tsp Vanilla Powder
  • 1 tsp Salt
  • 5 Bananas – Mature
  • ½ cup Hazelnuts
  • 3 tbsp Sour Cream or Greek Yoghurt
  • ½ cup Dark Chocolate

Instructions

  • 1. Melt the butter. Grease a square baking dish 8×8-inches and line the bottom with a piece of baking paper.
    2. Whisk together the eggs with the sugar and brown sugar until it’s a thick and fluffy mass. Whisk in the rest of the butter.
    3. Mix in flour, natron and vanilla powder and stir gently together.
    4. Peel the bananas and mash them with a fork together with the sour cream. Pour the mashed bananas into the cake batter and stir together.
    5. Chop the nuts and sark chocolate roughly and mix half of them into the cake mix.
    6. Pour the cake batter into the baking dish.
    7. Sprinkle the cake with chopped dark chocolate and the rest of the nuts and tap them gently (so they just dig a little deeper into the cake batter).
    8. Bake the cake in the middle of the oven at 175 for around 40 minutes. Let it cool before serving.
