This super easy pesto quesadillas is not only vegan, it’s also incredibly delicious and loaded with melting cheesy textures and lots of pesto flavours. Think oozing cheese (vegan)  and basil pesto coming together inside a crispy, golden quesadilla. It’s mindblowingly delicious and so incredibly easy to make. 

These vegan pesto cheese quesadillas are a kid favourite and my go-to whenever I want to convince kids to love vegan food. It’s one of the easiest and quick recipes you will ever make, but it’s mouthwateringly addictive. It’s almost so easy that I nearly didn’t think to put it on the blog. But by popular demand and my family insisting that this recipe needs to be shared, I finally caved in. 

So, here it is. My super easy and completely addictive, ready in just 5-7 minutes vegan cheese and pesto quesadilla recipe. I hope you like it.

Gluten free vegan cheese and pesto quesadillas version

If you need to make your quesadillas gluten free, you can just use tortillas made with corn flour or use your favourite type of gluten free tortilla. Any type will work well for this recipe as it’s all about containing the cheesy deliciousness. The vegan cheese and pesto combination are the stars of this show. 

Can I use another type of vegan cheese?

Yes, you can. In fact, you can use any type of vegan cheese you prefer, just as long as it has a good melting quality. You can also use your preferred type of vegan cream cheese. The important thing is that it melts well and mixes with the pesto for that delicious oozing cheesy pesto combination. 

Can these pesto quesadillas be made in advance?

Yes, they can…but of course the cheese won’t be melty if they are made in advance and the tortillas may go from crispy to a softer texture. The taste will still be just as amazing though, and you can always reheat them to regain the crispiness and melty cheese. 

Variations 

This recipe is my basic stable recipe…you can add any of your favourite veggies and fresh herbs to the recipe. I can recommend tomato slices, spring onions, sun dried tomatoes, garlic and lots of fresh herbs for a fancier meal. 

How are these Super easy vegan pesto quesadillas made? It’s very quick and simple. Just:

Instructions

  • Start by laying out your tortillas on a clean counter. Brush pesto generously onto one to the tortillas and spread the vegan cream cheese on top. Finally, lay 1 slice of vegan cheddar cheese on top and place the second tortilla on top, so you have a tortilla sandwich. 
  • Heat a grill or frying pan and brush the tortillas with olive oil on each side (I usually brush 1 side with oil and place that side down on the grill. Then I brush the other side of the quesadilla with olive oil right before turning it over).
  • Cook the quesadilla at medium high heat for around 2 minutes on each side or until the tortillas turn golden and crispy and the cheese starts to melt. Remove from the heat and allow to cool for a few minutes before serving. Enjoy.

You can add any extra vegetable slices like tomatoes etc. plus fresh herbs to this recipe
