Easy healthy rye bread chips – crunchy, dark flavored and utterly snackable rye bread chips. These healthy chips are satisfyingly crispy, so tasty and amazing for scooping up creamy dip. It’s like regular chips meets healthy crunchy Chex mix goodness and I’m here for it.

Crunchy, savory and completely mouthwatering, rye bread chips is my favorite healthy snack. I make a big batch for parties, gameday, movie nights and even just for my healthy in-between snacking. 

You know those days when you just need a snack, but you also want to be healthy? That’s when I always reach for these crunchy crackers. They’re totally munchable, golden and crispy and exactly what I want to satisfy my chip’s cravings. 

To make my golden crunchy rye bread chips I usually use my favorite Danish rye bread recipe, but you can use any dark bread or soda bread to make these healthy chips.

Origins of Rye bread chips – rugbrøds chips

These traditional healthy crackers are the healthy snacks I grew up eating. Called rubrødschips in Danish, they’re a favorite healthy homemade naturally vegan snack in Scandinavia.

Ingredients to make rye bread crackers and healthy dark bread chips 

Rye bread – or any other dark bread like soda bread or similar (grab my easy rye bread recipe here). Any dark bread will work in this recipe. You can use bread with or without lots of seeds. Personally, I like a rye bread full of seeds as they roast in the oven and gives the chips a nutty flavor that’s irresistibly tasty.

Olive oil – the olive oil makes sure the bread becomes golden and crispy on top as the crackers bake. Spray the oil on or brush to coat evenly on the top side of the bread slices (there’s no need to coat both sides in oil). Any type of vegetable oil will do. If you prefer you can also use avocado oil, coconut oil or whichever vegetable oil you prefer.

Seasoning – I like to season with sea salt flakes and oregano. But any type of salt and seasoning will work so use your favorite and don’t be afraid to experiment. I also like to mix up my seasoning and occasionally I’ll season with smoked paprika or Herb de Provence. There’s no going wrong. It all tastes delicious.

How to make rye bread chips 

  • Line two baking sheets with baking paper.
  • Cut the bread into thin slices (almost as thin as you can get them while they still hold their shape).
  • Place the rye bread slices on the lined baking sheets and spray it brush them with olive oil. Season with salt and oregano.
  • Bake the rye bread chips for 10-15 minutes at 400F (190 degrees Celsius) or until the chips are golden and crispy (without being burned).
  • Remove the chips from the oven and gently transfer to a rack to cool. As the chips cool they will become completely crispy.

These crispy rye bread crackers are perfect for making homemade Chex mix. All you need are your basic Chex mix ingredients. Let’s break it down step-by-step.

Ingredients to make homemade vegan Chex mix

Peanuts – peanuts or mixed nuts is a Chex mix staple. Get your favorite savory nuts and add to the Chex mix.

Chex – you can get just one type of Chex or buy all three – corn, wheat and rice – to make your Chex mix. 

Small pretzels – get your favorite kind. I like to use the small pretzels, but any type will work.

Rye chips – I use my homemade rye chips.

Vegetable butter or olive oil – the butter or oil is essential to making your Chex mix.

Worcestershire sauce – I use a vegan and Gluten-free Worcestershire sauce.

Seasoning – salt, garlic powder, paprika and onion powder. Or you can add your favorite herbs and spices. 

Easy way to make homemade Chex mix with rye bread 

Add the nuts, Chex, pretzels, and rye chips to a large mixing bowl.

Next, melt the vegetable butter in a saucepan (or a microwave). Season the butter with garlic powder, salt, paprika and onion powder and whisk to combine. Pour the melted butter over the Chex mix and gently toss to coat. Scrape the Chex mix into a microwave safe bowl and heat for 1-2 minutes. 

Pour the Chex mix into a serving bowl and enjoy.
