Because I always have leftover bread that’s going stale, I’ve had to come up with lots of delicious ways to use bread. But this one is my top pick go-to recipe that I happily make every time. Because who doesn’t love pizza, right? And when eating pizza also means you’re not wasting food then it’s a win-win of delicious proportions. 

I like to think of pizza as the ultimate soul healing comfort food. It has a way to soothe the heart and satisfy your tastebuds all at the same time. 

When you’re working with something as easy and tasty as pizza bread there are a lot of amazing pizza topping options. 

Some of my favorite pizza toppings include:

  • Spinach, tomato, and mozzarella (can be vegan mozzarella)
  • Vegan sausages, bell peppers, and olives
  • Chickpeas, garlic, mozzarella, and smoked paprika 
  • Eggplants, Parmesan cheese (vegetarian or vegan), thyme, and olives

I’m just giving you my favorite basic recipe (which I happily eat just as is), so don’t be afraid to have fun and add more ingredients and toppings.

How to make stale bread spongy again

Bringing stale bread back to life is a lot easier than it seems. All it requires is to cut the stale bread into bread slices and lightly dab water on each of the slices. Next, toast the bread for 1-2 minutes on each side and the water and heat bring new life to stale bread.

Let’s dive into the ingredients you need to make vegetarian (or vegan) easy loaded pizza bread:

First up you need bread. Stale bread works best, but any type of bread will do. I used a big round farm loaf bread when I took the recipe pictures, but any bread will work and be in any shape.

Secondly, you need tomato paste. I like to use a generous amount of tomato paste because it adds an intense flavor of sunny tomatoes that tastes just like a slice of Italian summer.

Thirdly, you need a lot of olive oil. The olive oil helps bring the stale bread back to life and makes it light, fluffy, and delectable. Plus, it creates that wonderfully golden crispy pizza crust we all know and love.

Cheese

– of course, you need lots of cheese to make the best pizza. Cheese and pizza just go together, especially melty stringy mozzarella cheese. For my vegetarian version, you will need a good shredded vegetarian mozzarella cheese. I’m a big fan of using 2-4 different types of cheese on my pizza to add more depth and cheesiness to my vegetarian pizza pie.

Other great cheeses you can use (because, let’s face it, the more cheese the better):

  • Vegetarian cheddar cheese (or vegan cheddar cheese)
  • Dairy-free mozzarella (vegan if needed)
  • Vegetarian Parmesan cheese (or vegan Parmesan cheese)

Add all the cheeses together in a bowl and top the pizza generously with cheese.

Seasoning

– of course, you need the right seasoning to create those Italian flavors we crave. Spices I could never live without on my pizza are oregano. Other spices I like to use on my pizza are a little thyme, sea salt, a pinch of black pepper, and a little dried basil. 

Optional – vegan pepperoni. I added vegan pepperoni on the pizza in the recipe pictures, but adding pepperoni is completely optional. It adds a little extra crunch and feels like a traditional vegetarian pepperoni pizza. But you can just as easily substitute the vegan pepperoni with slices of tomatoes, cooked chickpeas that go golden and crunchy in the oven, or even just serve the pizza bread as a simple 4 cheese pizza (which I can recommend. Yum).

Leftover easy loaded pizza bread 

This pizza bread is fab the next day. It makes a great easy lunch option, especially when it’s reheated for 30 seconds in a microwave, bringing the melty cheese back to life.

Serving Size 1 pizza bread

Ingredients

  • 1 large 10" 1-inch thick slice of bread or several smaller slices of bread
  • 2 tbsp Olive Oil
  • 3-4 tbsp Tomato Paste
  • 1 cup Shredded Vegan Cheese Shredded mozzarella, cheddar, and Parmesan are all great
  • 5-8 slices Vegan Pepperoni or tomato slices
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Dried Basil
  • ½ tsp Sea salt or Kosher Salt more to taste
  • Pinch of Pepper

Instructions

  • Preheat the oven to 350F and line a baking sheet with baking paper.

Very stale bread:

  • Lightly dap a little water on each side of the bread slice (be careful not to use too much water. You want just enough to bring the life back into the bread). 
  • Next, place the bread on the lined baking sheet. Drizzle olive oil over the bread before generously spreading tomato paste on top of the bread, all the way to the edges. Season with basil and thyme at this point.
  • Top with the shredded cheese, spreading it out evenly all the way to the edges. 
    Place the vegan pepperoni (and any other toppings you’re using) on top of the pizza bread. Finally season with salt, ground pepper, and oregano.
  • Bake in the oven for 20-minutes or until the cheese has melted and the pizza bread crust is golden and crunchy.
    Let the pizza cool for 5 minutes before serving and enjoy.

Fresh bread:

  • Place the bread on the lined baking sheet. Drizzle olive oil over the bread before generously spreading tomato paste on top of the bread, all the way to the edges. Season with basil and thyme at this point.
  • Top with the shredded cheese, spreading it out evenly all the way to the edges. 
    Place the vegan pepperoni (and any other toppings you’re using) on top of the pizza bread. Finally season with salt, ground pepper, and oregano.
  • Bake in the oven for 20-minutes or until the cheese has melted and the pizza bread crust is golden and crunchy.
    Let the pizza cool for 5 minutes before serving and enjoy.
