  • If using a large pita, it’s often simpler to cut it in half and gently open each half to create two pockets. This way, you have two smaller pitas to fill, which can be easier to manage. Depending on the brand of pita, some may be easier to open whole, so go with whatever works best for your pita.
  • To assemble your pita sandwiches, start by spreading about 2 tablespoons of hummus (or sauce of your choice) on the inside of each pita half. Place three falafel balls in each pocket, then fill with your favorite veggies, such as lettuce, tomatoes, onions, and cucumbers. Drizzle some tahini yogurt sauce on top, and serve with extra sauce on the side for dipping.

Tahini Sauce Dressing Ingredients:

  • 1/2 cup tahini (120g)
  • 1/4 cup water (60ml)
  • 2 tablespoons lemon juice (30ml)
  • 1 garlic clove, minced (about 3g)
  • 1/2 teaspoon salt (3g)
  • 1/4 teaspoon ground cumin (1g)
  • 1 tablespoon olive oil (15ml) (optional for creaminess)

How to make pita dressing Instructions:

1.In a bowl, combine the tahini, water, lemon juice, minced garlic, salt, and cumin.
2.Whisk until smooth. If the sauce is too thick, add more water, a tablespoon at a time, until you reach your desired consistency.
3.Taste and adjust seasoning if needed. For extra richness, stir in olive oil.
4.Serve drizzled over your falafel pita sandwiches or as a dip.

Tips:

  • Important Tip: Be sure to start with dried chickpeas. Canned chickpeas won’t work for this recipe, as they’re too soft and can affect the texture. The dried chickpeas need to be soaked overnight, for at least 18 hours, but allowing up to 24 hours is ideal to ensure they’re softened enough for blending.
  • Toasting sesame seeds: To toast sesame seeds at home, place raw seeds in a dry skillet over low heat. Stir them occasionally for 1-3 minutes until they become golden brown. Immediately transfer the seeds to a separate dish to cool, preventing them from burning in the hot pan.
Baking Option: If you’d prefer to bake the falafel instead of frying, you can bake the patties in a preheated oven at 350°F (175°C) for 15-20 minutes. Flip the falafel halfway through the baking time to get an even texture on both sides. Use a lightly greased baking sheet, and for extra crispness, brush the patties with a bit of extra virgin olive oil before baking.
Make-Ahead and Freezing: To get ahead on meal prep, you can prepare the falafel mixture and shape it into patties (up to step #6 in the recipe). Arrange the patties on a parchment-lined baking sheet and place them in the freezer until they harden. Once frozen, transfer them to a freezer-safe bag. These will last well in the freezer for up to one month. You can fry or bake the falafel straight from frozen without thawing.
Air Fryer Option: Falafel can also be easily cooked in an air fryer for a healthier alternative. Preheat your air fryer to 350°F (175°C), lightly brush the falafel patties with olive oil, and cook for about 12-15 minutes, turning them halfway through for even cooking.
