Let me just say “Wow”. I am obsessed with these moist, fudge like and absolutely delicious gluten-free healthy vegan apple muffins. They are amazing as a healthy dessert (no one will ever know they are healthy) and absolutely delicious as a healthy breakfast cake. It just doesn’t get much better than these muffins.
You can eat these amazing vegan apple cinnamon muffins as a healthy breakfast option (Honestly, I could eat these for breakfast every day because they are just so delicious)…or you can serve them as a dessert, healthy midday snack and anything in between.

Meal prep friendly apple muffins
These amazing vegan apple muffins are freezer friendly, which just makes them in even better in my opinion. They can be frozen after baking and cooling so you always have a healthy snack ready and waiting for you. These muffins can just be reheated or defrosted and they will be just as delicious as when they were freshly baked.
What type of non-dairy milk should you use for the gluten-free healthy vegan apple muffins?
You can use your preferred type of non-dairy milk. I am partial to almond milk as it keeps the baked goods moist and delicious for longer and completely eliminates the needs for any type of butter substitute. Another good option is to use coconut milk, but oat milk and soy milk also works very well in this recipe.
Rice milk isn’t quite creamy enough and won’t make the muffins as moist, but it can still be used if you prefer it.
Baking with apples
These delicious gluten-free apple muffins can be made in several ways. I’ve tried making them with half of the apples grated and the rest more roughly chopped to get those larger apple chunks as seen in the pictures…it works out really well, but the dough becomes a little more crumbly this way.
The fan favourite option is to grate all the apples, because it gives the dough a more even, slightly fudge and absolutely delicious apple cinnamon cake taste and texture.
What to do if yo are allergic to nuts
If you are allergic to nuts, you can easily substitute the walnuts with coconut flakes or pumpkin seeds. You could also just leave out nuts and seeds altogether if you prefer. The muffins will still taste amazing.
How are these delicious gluten-free healthy vegan apple muffins made? It’s very easy. Just:
Instructions
- Preheat oven to 350F and line and grease muffins baking tins.
- Add the non-dairy milk, applesauce, vanilla extract and coconut sugar to a mixing bowl and stir to combine.
- n another bowl, combine the oat flour with the baking powder, cinnamon, ginger and salt. Stir together until all the dry ingredients are blended.
- Next, pour the wet ingredients into the dry ingredients and mix gently together until it forms a wet dough. Fold in the chopped walnuts and shredded apples until everything is mixed. Pour the muffins batter into the greased muffins tins (don’t fill them all the way up).
- Sprinkle brown sugar or coconut sugar on top of the muffins (optional).
- Bake the muffins in the oven for 12-15 minutes or until a toothpick cleanly comes out of the center of the the muffins. Remove the muffins from the oven and let them cool before serving.

- 1 cup Non-dairy Milk Almond milk or cashew milk works best
- ½ cup Unsweetened Applesauce
- ¾ cup Coconut Sugar
- 2 tsp Vanilla Extract
- 2 cups Quick Cooking Rolled Oats Gluten-free and Blended into fine flour
- 2 tsp Baking Powder
- 3 tsp Cinnamon Powder
- 1½ tsp Ginger Powder
- Pinch of salt
- Juice from ½ Lemon
- ¾ cups Walnuts Chopped
- 1-2 tbsp Brown Sugar or coconut sugar for topping Optional
