Preparing your watermelon skins salad

First step to making Tarbooz Ki Sabji is to wash and rinse your watermelon well. You want the skins to be completely clean. I like to use organic watermelon, so I know it’s free of pesticides…but I still recommend cleaning the watermelon skin before using it.

Step 1. Wash the watermelon in your sink and rinse it well

Step 2. Carefully cut the watermelon and place the watermelon meat in a bowl (or eat it)

Step 3. Cut the green watermelon skins into 1-inch chunks and cook them in a large pot of boiling water for 30-minutes. This step is important to soften the watermelon rinds and make them edible.
