These delicious Easy Zucchini Carrot Fritters with cooling yogurt dip are the most amazing, mouthwatering and oh so easy to make summer/autumn meal. You can serve these vegetarian fritters as is, just with the dip, or you can add a side of salad. 

They are made using only simple, easy to get ingredients, but don’t let that fool you. These veggie cakes are packed with shredded zucchini, carrots, garlic and spices, all coming together to make an irresistible dish that everyone is sure to love. 

To be honest, these fritters are amazing just as they are and I’m happy to eat them as a snack with a little yogurt dip…but I also like to serve these veggie cakes with a side of my favourite harvest salad or a colorful beetroot salad. These veggie cakes go well with everything and they are a sure favourite in my home. Everyone adores them and they are one of my most requested dishes with kids and adults alike. 

Personally, I like that these vegetarian Zucchini Carrot fritters are a great way to get children to eat more veggies without it being obvious, and I’m happy to report that kids absolutely adore these fritters. But they are also just as popular with adults, because they are so deliciously flavourful.

You can also use these fritters in burgers with all your favorite burger toppings or use these fritters as a healthy lunch option.

I like to serve my Zucchini carrot cakes with a quick cooling yogurt dip, because it brings out the best in the fritters. You can easily serve these veggie cakes with your favourite dip or use my quick yogurt dip.

How is this quick yogurt dip made? It’s very quick and easy:

  • Combine the greek yogurt with lemon juice, minced garlic, chili flakes and fresh chopped basil and add salt to taste. Keep the yogurt dip cool until serving.

  • Combine the shredded zucchinis and shredded carrots in a bowl and add the curry powder, dried oregano, sambal olek (chili sauce) and salt and stir to combine. Add the eggs to the mixture and mix until everything is combined. Finally, stir in the flour a little at a time until it has a dough like consistency. 
  • Heat olive oil in a non-stick pan and use two spoons to shape the zucchini dough into fritters. Fry the fritters at medium heat for 3-5 minutes on each side or until the fritters are nice and golden on the outside. Serve the fritters with a cooling yogurt dip and enjoy.

  • 2 tbsp Olive Oil
  • 2 cups Shredded Zucchinis
  • 2 cups Shredded Carrots
  • 2 Eggs

Super Quick Cooling Yogurt Dip

This super easy and quick yogurt basil dip goes with just about anything. It only takes minutes to make and you can make it well in advance. It's delicious, cooling and brings out the best in any veggie.

  • 3 cloves Garlic Minced
  • Juice from ½ Lemon
  • Pinch of dried Chili flakes
