This amazing easy baked tofu recipe is my absolutely delicious take on making a vegan roast. It’s simple to make and very low-maintenance because the oven does most of the work for you. And because the veggies and tofu roast are made together in the same pan with the sauce, all the flavours infuse the sauce with a creamy richness and ads a whole extra level to the dish.

This amazing baked tofu roast soaks up all the flavours of the spices and has a wonderfully firm and meat-like texture. It’s so good and so incredibly easy to make.

What kind of veggies should I use for this easy baked tofu roast?

You can use any veggies you have at hand. I like to use a frozen veggies mix with bell peppers, onions, corn and beans. But any type of veggies will work, so don’t be afraid to add your favourites.

  • Zucchini, diced
  • Tomatoes, diced
  • Leeks, sliced
  • Carrots, diced
  • Eggplants, diced

  • What kind of tofu works best for this recipe?

Firm tofu and extra firm tofu works best for baking in the oven. They have a similar texture to meat and become very much like a Sunday roast when baked in the oven. 

How is this vegan and gluten-free baked tofu roast made? It’s very simple. Just:

  • Preheat the oven to 350F. 
  • Pour the veggie mix into a baking pan. Remove the tofu from the packaging and pat it dry with a clean towel. Place the tofu on top of the veggies and pour the coconut oil into the pan. Drizzle olive oil over the tofu.
  • Next, season with tamari sauce, hoisin sauce, chili powder, dried thyme, smoked paprika and salt. Use a fork to gently stir the seasoning into the sauce (but leave the seasoning on top of the tofu).
  • Bake the tofu and veggies in the oven for 25-30 minutes or until the veggies are cooked and the tofu is starting to turn golden on top.Cut the tofu roast into slices and serve.

Ingredients

  • 1 tbsp Olive Oil
  • 1 block (300g) Firm Tofu
  • 1 pound Mixed Vegetables Can be frozen
  • 1 cup Coconut Milk
  • 3 tbsp Tamari Sauce
  • 2 tbsp Hoisin Sauce
  • Pinch of Chili Powder
  • 2 tsp Dried Thyme
  • 2 tsp Smoked Paprika
  • Pinch of salt

    What an easy recipe! So many non-vegans I know have the misconception that tofu is gross as they’ve only ever had it unseasoned.
