These vegan apple pockets taste just like the real butter loaded apple pie pockets we grew up eating…but they are completely vegan and absolutely delicious.
Apple pie pockets might just be one of my favourite fall and winter recipes (okay, I happily eat them year round, but you know what I mean). Unlike regular apple pie, these easy to make apple pie pockets are easy to eat anytime and anywhere. They are a favourite with kids and adults alike and are easy to serve at any party.

What vegan puff pastry should I use
You can make your own vegan puff pastry or buy ready to use puff pastry at the grocery store. Most grocery store puff pastries are naturally vegan, because it’s easier to produce in a factory that way. Just be sure to read the ingredients list before buying.
What kind of apples should I use?
You can use your favourite type of apples for this recipe. I like to use half sweet apples and half tart apples to add extra depth and flavour. If you plan to only use tart apples I would leave out the lemon juice in the recipe as it’s already going to be sour enough. If, however, you plan to only use sweet apples you can always add 1 extra tablespoon lemon juice.
How to serve these easy vegan apple pie pockets
You can serve these delicious apple pit pockets as is or with a side of vegan ice cream or vegan whipped cream.
Vegan Apple Pie pockets variations
You can easily customise the flavours of this recipe by adding a little vanilla extract, or changing the spices. If you want extra crunch, I like to add a handful of chopped nuts, like almonds, hazelnuts or walnuts.

Instructions
- Preheat oven to 350F.
- Peel the apples and remove the pits. Cut into dices. Heat a pan with coconut oil and add the diced apples. Let the apples cook at medium heat for 5 minutes while stirring occasionally. Add the brown sugar, cinnamon, nutmeg, lemon juice and a small pinch of salt and stir to combine. Let the liquid reduce a little before removing from the heat.
- Roll the puff pastry sheet out onto a baking sheet lined with baking paper. Cut the puff pastry into 6 equal rectangles and place the apple filling on each sheet. Brush a little water on the edges of Close the puff pastry over the apple filling and use a for to press the edges together. Turn the apple pie pockets over and cut 3 slices into the top. Brush the top of the pockets with coconut oil and bake in the middle of the oven for 20-25 minutes or until the puff pastry is golden and baked. Remove from the oven and allow to cool 10 minutes before eating. Enjoy.

- 5 Apples
- 3 tbsp Coconut Oil or vegan butter
- 2 tbsp Brown Sugar
- 3 tsp Cinnamon Powder
- ½ tsp Ground Nutmeg
- 1 tbsp Lemon Juice
- Pinch of salt
