Easy cheesy Parmesan bread rolls (vegan option)

These deliciously cheesy parmesan crusted bread buns are so irresistibly good that they should probably come with a warning. These no-knead rolls have a fluffy crumb, light flavour and a deliciously cheesy Parmesan crust that makes it hard to resist. 

Because I love homemade bread but I also hate to knead bread this is my go-to bread recipe. It requires no kneading, a minimal amount of cleaning and doesn’t make a mess of my kitchen. And it’s a great bread recipe for baking with kids, because it’s so easy and delicious.

This Easy Cheesy Parmesan Bread Rolls recipe is a big portion, but you can easily cut al the measurements in half if you don’t need as many rolls. 

This is a yeast bread so it needs time to rise, but the waiting is so worth it for a chance to enjoy the lovely cheesy crust and soft, fluffy interior. 

You can add more herbs if you like and change up the flavors each time you bake these…because I’m quite sure once you bake these rolls once you are going to want to bake them over and over again.

Baking with yeast

The thing about baking with yeast is that the recipes can never be quite as precise as when you’re baking with baking powder. The rising time can differ from kitchen to kitchen, depending on the temperature outside, but as long as you check the dough once in a while while it rises it’s really very simple. As soon as the dough is about to spill over the edges of the bowl, then you know the yeast has done its job and you’re ready to make the rolls. 

Tips for baking with yeast:

  1. Be careful of the water temperature of your proofing liquid and check that’s its not too hot before adding the yeast. If the temperature is too cold the yeast won’t be activated. If it’s too hot it will kill the yeast. For the best results you want the water to be lukewarm with a temperature range between 105-110F. 
  2. If you’re using instant yeast then it’s a bit more forgiving and the temperature can be a bit higher. 
  3. When it comes to baking with yeast the amount of flour indicated in a recipe is always approximate. You may need more and you may need a little less. That’s why it’s always best to mix in the flour a little at a time until you reach the desired dough consistency.

Overnight Cheesy Parmesan Bread Rolls

If you want to prepare this recipe in advance so it’s ready to make 12-15 hours later I have just the baking hack for you . To make this bread recipe ready in advance, just use half of the indicated amount of yeast and store the dough covered in the refrigerator until you are ready to bake. 

Letting the bread rise slowly in the refrigerator intensifies the flavors and makes the crumb extra fluffy. 

When you are ready to bake, simply bake the rolls in the oven as instructed on the recipe.  

Vegan version

You can easily make this bread completely vegan by replacing the parmesan cheese with nutritional yeast and vegan Parmesan. 

So how are these Easy cheesy parmesan bread rolls made? It’s surprisingly easy:

Instructions

  • In a large mixing bowl add 1/2 cup lukewarm water and whisk in the yeast until it is dissolved. Add the rest of the lukewarm water as well as the salt and sugar. Stir in the rolled oats and the Italian 00 flour before slowly adding the all-purpose flour a little at a time. You want the dough to be fairly wet so they will just hold the shape when you shape the rolls with a spoon.
  • Once the dough has the right soft chewing gum consistency place it somewhere warm and cover with a clean cloth. Leave it to rise for 30-60 minutes or until the dough has risen to double size. 
  • Once the dough has risen, preheat the oven to 350F. Use a spoon to shape the dough into rolls and place them on a baking sheet covered in baking paper. Sprinkle sea salt, grated parmesan cheese and dried thyme on top (and optionally you can sprinkle a little extra flour on top to make the crust extra crispy). Bake the rolls in the oven for 25-30 minutes or until they are baked through and lightly golden on the outside. Remove the rolls from the oven and let them cool for at least 45 minutes before eating.
