I know, I know. I already have one amazing, mouthwatering vegan fudgy brownies recipe on this blog…but you can never have too much of a good thing, right? So, I’m here to bring you my easy 1 bowl Vegan Fudgy Brownies. This recipe is so incredibly simple – you don’t need any special ingredients and they’re so deliciously fudgy and chocolatey.
Think moist, fudgy brownies that are loaded with chocolate flavors and covered in a decadent vegan chocolate sauce. These vegan brownies are so good, they probably need to come with a warning. It’s nearly impossible to only eat one slice (I may have skipped lunch and eaten too many of these brownies instead. Oops.)

I would never in my life have believed that it was possible to make amazing and fudgy brownies completely without milk, dairy and eggs…but these chocolate beauties have proved me wrong.

When it comes to cooking, I often think simple is better. There’s something about stripping the ingredients back to the basics that allows the flavors to really shine through. And it doesn’t hurt that it also makes the recipes much easier to follow.

What to do if you have nut allergies

If you happen to be allergic to nuts, you might assume that this brownie recipe isn’t for you. But that’s not the case. You can easily replace the almond milk with soy milk or coconut milk. The texture won’t change noticeably, but you will be able to taste the coconut milk if you choose to use it. The soy milk is neautral in flavor and works really well in the recipe.

Instructions

  • Preheat the oven to 350F (180C) and line an 8-inch square baking tin with baking parchment.
  • Add flour, sugar and cacao powder together in a large mixing bowl and stir everything together until combined.
  • Next, add the instant coffee powder to the melted chocolate and stir together until the coffee is dissolved. Pour the melted chocolate into the large mixing bowl. Quickly add the almond milk, vegetable oil, vanilla and salt and gently stir everything together.Once the douch is smooth, add the chocolate chips and mix together.
  • Next, pour the brownie batter into the lined baking tin and bake for around 25-30 minutes in the middle of the oven. Use a skewer to determine when the brownie is ready by inserting it in the center of the cake – If the skewer comes out clean the brownie is done. Be careful not to overbake, as the brownie will lose it’s fudge like texture.Serve as is or with a topping of chocolate sauce and side of fresh berries…and add a dollop of ice cream for an extra decadent treat.Enjoy.

  • 1 cup (140g) All Purpose Flour
  • 6 tbsp Cacao Powder
  • 1 cup (200g) Caster Sugar
  • ⅓ cup (80ml) Vegetable Oil
  • 1 tsp Vanilla Extract
  • ½ cup (200g) Vegan Dark Chocolate Melted

  • ½ cup (75g) Dark Chocolate Chips Vegan

Notes

Storing the brownies in the fridge after they are done will make them extra fudgy and delicious.
These brownies can be frozen.
