This amazing vegan Waldorf salad is named the best easy vegan grape and cucumber salad for a reason. It’s refreshing and loaded with lots of different textures. Think fresh, crunchy and juicy grapes, deliciously refreshing cucumber coated in creamy vegan dressing and topped with crunchy walnuts and fresh herbs. It’s irresistibly good…and surprisingly simple to make.

This vegan almost Waldorf salad requires only a few simple ingredients that compliments each other deliciously. I call this an almost, kinda, sorta Waldorf salad, because it’s a simplified version of the original with a twist. But although it’s a simplified version, it is no less tasty. Quite the opposite, in fact. 

Note:

There’s no apples or celery stalks in my grape and cucumber salad, although you can easily add them if you like.

Can I add apples to the easy vegan grapes and cucumber salad?

Absolutely, yes. Apples work amazing in this salad, adding extra juiciness and crunchiness. You can use any type of apples you prefer, although I can definitely recommend using Fuji apples or similar.

The reason I created my simplified Waldorf salad, was partly because I wanted a vegan Waldorf salad (because it’s one of my favourite salads) and partly because there’s a lot of food allergies in my family that I have to take into account when I create recipes. 

What kind of sweet and sour chili sauce should I use?

You can use your preferred type of chili sauce. I like mine to be medium, because I’m not the biggest fan of hot spicy food…but you can use as much or as little spice as you prefer. 

If, like me, you’re not a fan of spicy food, I recommend using a mild or medium sweet and sour chilli sauce. But if you like your spices hot, go ahead and use that instead. This salad is all about adding your favourite flavours. 

How to serve the best vegan grape and cucumber salad 

You can serve this salad as a side dish with almost any main meal. I like to serve it all the way through summer with grilled veggies and my favourite vegan BBQ mains. But I also serve this salad as my traditional Christmas salad, because it’s so delicious and refreshing. 

How is this easy vegan “almost” Waldorf salad made? It’s very easy. Just:

  • Add all the grapes and diced cucumber to a salad bowl.
  • In a small bowl, mix together the vegan mayonnaise with lemon juice, sweet and sour chili sauce, salt and pepper. Once the dressing is mixed well, pour it over the salad and toss until everything is combined. 
  • Add extra salt and seasoning if needed. Top with chopped fresh basil or mint leaves and roughly chopped walnuts. Serve and enjoy.

Ingredients

  • 1 cup Grapes Cut into halves
  • 1 cup Cucumber Diced
  • cup Vegan Mayonnaise
  • 1 tbsp Lemon Juice
  • 2 tbsp Sweet and Sour Chili Sauce
  • Salt and Pepper to taste
  • 1 bunch Fresh Basil or Mint leaves Chopped
  • ½ cup Walnuts Chopped
