This easy potato topped pizza recipe is delicious, mouthwatering and a great way to use leftover potatoes. It’s made with my quick 15-minute vegan pizza dough topped with red pesto, potato slices, spices and vegan cheese (or feta cheese). 

It’s melt-in-your-mouth delicious and works for every occasion from get-togethers to summer nights to children’s parties to quick delicious dinners. Because it’s so easy to make and requires almost no time or effort it’s my go-to quick dinner solution that always makes everyone happy.

Think crispy pizza bread with golden baked potato slices topped with creamy, cooling cheese and flavourful Mediterranean spices. It doesn’t get much better or easier than this vegan potato pizza.

Which pizza dough should I use?

You can use your favourite pizza dough recipe, or try my amazing and quick 15-minute pizza dough recipe (a variation of Jamie Oliver’s original recipe)…or you can even buy a ready-to-cook pizza dough at the grocery store if you are in a hurry. 

Any type of pizza dough will work in this recipe, even a nice, thick deep pan pizza dough should do the trick.

What kind of potatoes should I use on pizza?

You can use any type of pre-cooked and sliced potatoes on pizza. All potatoes work equally well in this recipe, from Yukon gold potatoes to sweet potatoes. The trick to using potatoes as topping is to always pre-cook them. That’s because potatoes take much longer to cook than pizza dough, so to get them ready at the same time the potatoes should already be cooked. 

Using pre-boiled potatoes will also make the potatoes crispy at the edges and let them soak up the flavours of the spices.

Which vegan cheese works best in this recipe?

Again, you can use your favourite vegan cheese for this recipe and even add a tablespoon of nutritional yeast to add extra cheesy flavours. I like to use cashew cheese because it has some of the same lightness and crumbly texture as feta cheese. But you can just as easily use your favourite vegan feta cheese, vegan mozzarella cheese or even silken tofu for this recipe. 

If you aren’t vegan, you can of course just use feta cheese as the cheese topping. It’s so good, light and creamy and a great vegetarian option.

  • Preheat the oven to 350F and line a baking sheet with baking paper (or use a pizza stone to cook if you have one).
  • Place your rolled out pizza dough on the lined baking sheet and spread the red pesto evenly over the pizza. 
  • Next, top the pizza with the potato slices and season with salt and greek spice mix. Generously crumble cheese on top and bake the pizza in the middle of the oven for 15-20 minutes or until the pizza dough is golden and ready to serve. 
  • Once the pizza is cooked, remove it from the oven and top with baby salad and a drizzle of chilli sauce. Cut into slices and serve.

Ingredients

  • 1 Pizza Dough
  • 5 tbsp Red Pesto vegan
  • 1 pound Cooked Potatoes thinly sliced
  • ½ cup Vegan Cheese or Feta cheese
  • 1 cup Mixed Salad
  • 1 tbsp Greek Spice Mix
  • Pinch of salt

Topping

  • Sweet and Sour Chili Sauce optional
