Who knew that a simple-to-make Easy Caramelized Onion Pizza Pie topped with melting Gorgonzola cheese and creamy pesto could be sooooo good? Okay, I admit I had a feeling it would be a tasty vegetarian pizza, but I didn’t realize just how amazing it was going to be. It’s the kind of recipe where all the ingredients stay fresh for a long time. And that makes this easy pizza my last-minute go-to for those days where I haven’t had time to shop and there’s no fresh produce in my refrigerator. It’s really my magic I-don’t-have-any-groceries-but-I-can-still-make-a-quick-mouthwatering-dinner recipe.

If you like big flavors then this vegetarian pizza is for you. It’s made using only a few flavor-packed ingredients that most of us always have at home. I know that pantry stables and luxurious dinners rarely go hand-in-hand, but this pizza pie is here to prove that it’s possible. Anything is possible. Like, delicious cheesy goodness wrapped around Caramelized onions all topped on a golden pizza crust. It can be summed up in one word; delicious.

You can make your own pizza dough or buy a ready-to-use pizza crust from the grocery store. I usually have at least one homemade pizza crust in my freezer just ready to cook, but a store-bought pizza crust will work just a well. And because this is a simple, straightforward recipe you get to use the type of pizza crust you prefer. There’s no judgment. And the truth is, I’ll happily use a pizza crust from the store if I’m out of my homemade pizza dough.

How to make Gorgonzola pizza vegan

I know it sounds impossible, but it can be done. The simplest solution is to substitute the Gorgonzola cheese with the best vegan blue cheese from the grocery store. Another tasty option is to sprinkle 2 tablespoons of nutritional yeast on top of the pizza along with crumbled tofu to add that grilled cheese-like texture.

What do you need to make this tasty vegetarian onion Gorgonzola pizza pie? 

Not a lot. Let’s take a look at the ingredients.

To make this easy pizza you need:

  • 1 pizza crust – homemade or store-bought 
  • 2 large yellow onions, or 3-4 smaller onions
  • 1/2 cup red pesto – homemade or store-bought 
  • Gorgonzola cheese, or other blue cheese like Stilton or similar 
  • Fresh basil 
  • Herbs
  • Dried oregano 
  • Sea salt

And that’s it. I bet you already have most of these ingredients in your kitchen already.

Now let’s take a look at how to make this easy 20-minutes vegetarian Caramelized onion pizza pie

Get your ingredients ready because this won’t take long. 

  • Firstly, you need to decide on what pizza dough you want to use. Store-bought pizza crust? Or my 15-minutes pizza crust? It’s all up to you.
  • Now, let’s get into the cooking details.
  • Heat olive oil in a non-stick frying pan. Add the sliced onions and fry them at medium-high heat. Season with a little salt and oregano and stir occasionally. Once the onions soften and begin to become lightly golden, remove them from the heat.
  • Preheat the oven to 400F and line a baking sheet with baking paper.
  • Place the pizza dough on the baking sheet. Top the pizza with red pesto and spread it out evenly, almost all the way to the edges. Top with the Caramelized onions and cheese and evenly distribute everything across the pizza. Sprinkle sea salt and oregano on top and bake the pizza for 10-15 minutes or until the crust is golden and done. 
  • Remove the pizza from the oven and garnish it with fresh basil. Serve and enjoy.

Can I use pie crust instead of pizza crust?

For this recipe, the answer is yes. You can use pie crust, pizza crust, or even puff pastry as the dough for this pizza pie. The type of crust you choose to use will change the texture of the pizza pie a little, but all ways lead to cheesy pizza deliciousness. Using puff pastry will make the dough more like a puff pastry pie. Think puffy, flaky, and golden pie crust with melty cheese and Caramelized onions. You really can’t make the wrong choice with this easy recipe.

What kind of vegan cheese is best for pizza?

The answer really depends on the results you want. For this pizza pie, I’m aiming for melting cheesy textures, so I would recommend using a vegan blue cheese substitute such as a vegan Gorgonzola or vegan Roquefort cheese. You can also make your own vegan blue cheese. 

I can’t find Gorgonzola cheese. What other cheese can I use to make caramelized onion pizza pie?

If you can’t find Gorgonzola cheese don’t worry. There are plenty of delicious vegetarian and vegan options out there. Other great cheese options are:

  • Roquefort cheese
  • Stilton cheese
  • Cabrales cheese
  • Or you can even use goat’s cheese for a completely different flavor note.

Note: Most of these cheeses are not naturally vegetarian, but all of these cheeses can be found in a vegan and/or vegetarian option
