A great leftover sushi rice recipe 

Who would have guessed that you could turn leftover sushi rice into a tasty meal fit for guests? Certainly not me, that is until I created this recipe one day when I had leftover rice and was trying to come up with creative and tasty ways to use it. 

How to use leftover sushi rice tips and tricks 

If you’re using leftover rice to make this recipe make sure you have stored the rice in a sealed air tight container so the rice doesn’t get dry. You want the sushi rice to still be sticky for this recipe.

Getting the taste just right so the sushi rice is infused with decadent truffles is easy if you do it right. The fragrant truffles won’t be quite as pungent when they are added after cooking, but they will still infuse the rice patties with a hint of luxurious truffle.

  • Start by soaking the dried truffles in a cup of boiled water for 10-minutes or until the truffles are soft. Drain away most of the water from the truffles leaving only 1 tablespoon that you’ll add to the rice later. 
  • Chop the truffles finely and gently stir them into the sushi rice along with the tablespoon of truffle water, being careful not to mash the rice grains. 
  • Next, comes the fun part. Shape the rice into a loaf and gently cut it into thick slices.

How to shape vegan truffle rice cakes

There are several ways you can go about shaping your cooked sushi rice into patties. You can store the rice in a bread loaf pan and cut it into slices as I did. 

Another way is to use a round cookie cutter (or a glass) to cut your rice into perfect round rice cakes. 

The third way to make rice patties is simply to grab two tablespoons full of rice and use your hands to roll the rice into balls. Gently press on the ball to make it a little flat so the sesame seeds can grip on both sides.

That’s it. Three super easy ways to make rice patties in no time.

How to cook sushi rice 

Rinse the rice in a sieve until the water is clear. Drain away the water and transfer the rice to a pot or rice cooker. Cover with water and add salt and add the chopped dried truffles to the rice. Cover with a lid and bring to a boil. Once the rice is boiling, reduce the heat to a simmer and let the rice cook while stirring occasionally for 15-20 minutes or until the rice has absorbed all the liquid. Remove from the heat and leave the rice to steam with the cover still on for another 10-15 minutes.

When the rice is cooked tender, press it into a loaf and cover it with plastic film or a damp towel to prevent it from drying out. Leave the rice to cool.

Making the Tahini sauce

Place all your tahini sauce ingredients into a blender and blend until it’s smooth and creamy. If the sauce is too runny just add a little more tahini. If you find the sauce is too thick for your liking just add a little extra cold water. 

How to make plant-based sesame-crusted rice patties 

These delicious rice cakes are simple to make and can be made in the oven or a frying pan.

Making the sesame-crusted rice patties in the oven

  • In a mixing bowl mix soy sauce, sweet chili sauce, and olive oil. Set aside.
  • Next in another bowl, mix sesame seeds with the garlic powder and thyme.
  • Now, preheat the oven to 400F and line a baking sheet with baking paper.
  • Gently remove the rice from the storage container and place it on a cutting board, being careful not to break the rice apart. Gently cut the rice loaf into 1/2 inch to 1 inch thick slices.
  • Next, carefully brush one side of the rice slices with the soy sauce mixture before dipping it in the sesame seed mix. Repeat on both sides so the rice patties are crusted in sesame seeds.
  • Place the rice patties on the lined baking sheet and bake in the oven for 15-minutes, flipping over halfway through.
  • Remove from the oven and serve with a dollop of tahini sauce.

What if I don’t like tahini?

You don’t have to use tahini sauce on your rice patties. Just make the patties and serve them with soy sauce, a peanut dressing, or your favorite sauce. You can’t go wrong.

How long will the tahini sauce keep?

The tahini sauce will keep for 3-4 days in the refrigerator stored in a sealed container.

Can I make sushi rice in advance?

Yes. Making the sushi rice in advance is a great way to save time.

How much is 1 bunch basil?

Ingredients

Rice (can be made in advance)

  • cups (300g) Sushi rice Pre-cooked weight
  • cups (360ml) Water
  • 2 tbsp Dried Truffles Chopped (if you’re using fresh truffles wait and add halfway through cooking)
  • ½ tsp Sea salt or Kosher Salt

Sesame Patties

  • ½ cup Sesame Seeds White or multi colored
  • 2 tsp Garlic Powder
  • 2 tsp Thyme
  • 5 tbsp Sweet Chili Sauce

Tahini sauce

  • ½ cup Olive Oil
  • ½ cup Water
  • 5 tbsp Tahini
  • 1 bunch Fresh Basil
  • 2 cloves Garlic or 2 tsp garlic powder)
  • 2 tbsp Lemon Juice
  • ½ tsp Sea salt or Kosher Salt more if needed
