Easy Date Night Tortellini with Spinach and Tomatoes

This easy vegan date night tortellini bowl features stuffed spinach pasta baked golden and crispy with spinach and roasted tomatoes that are bursting with flavor. It doesn’t get much easier or tastier than this one-pot pasta dinner.

There’s nothing quite as addictive as stuffed pasta roasted golden in the oven. It’s crispy, crunchy, and yet somehow still soft on the inside and oozing fresh garlic flavors. Imagine all that and then add creamy mildly spicy spinach and oven-roasted tomatoes. It’s a fall-in-love-over vegan pasta date night dinner. But I’m just as happy to make this easy one-pot vegan pasta on weeknights when I want a cozy bowl of comfort food. 

What happens when you bake pasta in the oven?

A small miracle is what happens. The tender pasta becomes golden and crunchy on the outside. Like a golden pasta chips fusion that’s crispy and soft all at once. It’s a must-try way to cook pasta that you won’t regret.

Vegan tortellini pasta recipe

If you are making your own stuffed pasta, I recommend filling them with spinach, minced garlic, and lots of seasoning. But if you don’t have the time to make your own tortellini (and who really does?) you can get vegan tortellini at the grocery store. Most grocery stores have lots of vegan stuffed pasta options to choose from, so just pick your favorite stuffing. 

Can I use another type of pasta for this easy date night tortellini recipe?

Absolutely. You can just as easily use ravioli or even regular pasta penne for this recipe. Although I much prefer tortellini or ravioli any type of pasta can be used.

Do I have to use fresh spinach?

You can easily use frozen spinach in this recipe, although I recommend thawing it first. Whenever I use frozen spinach I like to heat it in a pan first with salt, pepper, and garlic to really ramp up the flavors.

Is this easy pasta dinner meal prep friendly?

It isn’t made to be a meal prep meal because the pasta then needs to be heated in the oven twice and may become too crispy. That being said, I have successfully reheated leftover pasta by adding a little liquid to the dish and letting it be covered the entire cooking time. It wasn’t quite as good as the first day, but it still tasted amazing and I would happily eat any leftovers again.

Can I still make this pasta if I’m allergic to gluten?

Only if you either buy gluten-free tortellini (which I sometimes do) or make your own homemade gluten-free tortellini or ravioli. Gluten-free pasta works just as well in this recipe and becomes just as deliciously crispy as regular pasta.

How is this easy vegan or Vegetarian stuffed pasta date night recipe made? It’s super simple. Just:

  • Preheat oven to 350F and grease a baking pan or pie pan.
  • Pour the tortellini into the pan along with spinach, garlic, and tomatoes. Drizzle generously with olive oil and season with oregano, basil, salt, and pepper. Top with vegan cheese and cover the pan with a lid or tinfoil.
  • Cook for 15-20 minutes in the oven before removing the lid and cooking for 5 more minutes to give the pasta a golden crispy surface in places. Serve with a garnish of fresh basil and enjoy.

Notes

If you are using frozen spinach I recommend heating it in a pan with garlic, salt, and pepper before cooking it with the pasta. Add any extra liquid from the spinach to the pasta dish.

  • 2 large Tomatoes or 8 small plum tomatoes
