This is my go to vegan mashed potatoes recipe for Thanksgiving, Christmas and pretty much any other season and occasion where I can sneek in mashed potatoes.

Cooking trick

Because I’m all about cooking being easy and quick, I of course had to come up with a cooking hack. Since potatoes are going to be mashed up anyways, I started cutting them into chunks and cooking them that way. It shaves off a good deal of time compared to cooking a whole potato…and the results are just as delicious.

Getting the texture right

Mashed potatoes are all about getting the right creaminess and texture. Because every batch of potatoes are a little bit different, it’s always a good idea to add the liquid a little at a time to make sure the mashed potatoes ends up being creamy and not soggy.
At the same time, you also don’t want the mashed potatoes to be too thick. If that happens just add a little more water or almond milk until you get the texture you want.

Seasonings

This recipe is my base recipe for mashed potatoes. If you want, you can always add more seasoning, chop fresh dill and mix in or use any herb or spice you prefer. Anything goes so don’t be afraid to mix it up and make it your own.

How is this Creamy Vegan Mashed Potatoes Recipe made? It’s so easy:

  • Rinse and peel the potatoes. To make it go quicker, cut the potatoes into chunks and cook them in a pot of boiling water and cook them until they are tender.
  • When the potatoes are almost done, melt the vegan butter in a pan. Add the minced garlic and let it cook for a few minutes while stirring. Set aside.
  • Drain the potatoes and add the vegan butter, garlic, almond milk, water and salt and pepper. Use a potato masher to mash the potatoes and mix everything together. Serve hot and enjoy.

  • 1.5 lb Gold Potatoes
  • ¼ tsp Salt
  • Pinch of Pepper
  • 4 tbsp Vegan Butter
  • cup Water
  • ½ cup Almond Milk
