Eating ice cream in a warm summer day is something I don’t want to live without and luckily I don’t have to…because this vegan ice cream summer snack recipe is cooling, delicious, sweet and refreshing. And it’s so incredibly simple to make.

Meal prep friendly vegan peanut butter banana ice cream snacks
One of my favourite things about these easy banana nice cream peanut snacks is that they can be made in advance. It barely takes 5-minutes to make them and the freezer does all the rest of the work for you so you always have healthy refreshing snacks ready. I like to have a batch in the freezer at all times during the summer, because it makes life so much simpler when you can just grab a healthy snack whenever you feel like it – or give your kids a healthy ice cream alternative that tastes just as good.
What kind of Peanut Butter should I use?
You can use your favourite type of peanut butter for this recipe. I like to use organic lightly crunchy peanut butter, but if you prefer peanut butter without crunchiness that works just as well in this recipe.
Should I use fresh or old bananas for this nice cream recipe
Glad you asked. Unlike most nice cream recipes that require you to use older, more mushy bananas, this recipe does not. You can use any type of banana you prefer, fresh and green or old, because the bananas don’t have to be blended. In this recipe the bananas are simply cut into slices and frozen as is, so any type of banana works well.
For a lot of sweetness using older more yellow bananas works best as the bananas have had time to ripen and produce lots of sweetness.
For a less sweet and more fresh taste you can use less ripe bananas with a little green color on the peel. These bananas are more firm in the meat and have yet to produce as much sweetness…

Instructions
- Start by peeling the banana and cutting it into 10-12 slices. Place the banana slices on a sheet or in a clean container and cover with a lid. Place the banana slices in the freezer for 30-40 minutes.
- Once the banana slices are frozen, take them out and dip the bananas into peanut butter until they are coated. Top the peanut covered banana slices with a few sprinkles of chopped chocolate, nuts and berries (optional).
- Place the banana slices back in the refrigerator until you are ready to eat. Once you are ready to serve, take the banana snacks out of the freezer and let them sit for 1-2 minutes before eating. Enjoy.

- 1 Banana Fresh or ripe
- 4 tbsp Peanut Butter
Topping (optional)
- 1 handful Berries Lightly chopped or ripped
- 3 tbsp Chocolate Vegan and chopped
- 2 tbsp Nuts Chopped
