This Amazing Vegan Spicy Black Beans Zucchini salad is loaded with flavours and goodness. Think golden grilled zucchini with crunchy sesame seeds, protein packed black beans all held together by greek spices and fresh parsley. It’s so incredibly tasty and full of immune system boosting ingredients. Yum.

This easy spicy black beans squash salad can be eaten both warm and cold, making it ideal as a meal prep salad. It is great served on its own, both as a healthy lunch and dinner salad…but it can also be served as a side dish to any type of main dinner. You can easily make this salad hours in advance (and maybe even the day before (just wait and add the parsley until you are ready to serve) . Because the ingredients are more hardy, they keep well for longer and the flavours only intensifies and becomes more tasty. 

What to do if you are allergic to sesame seeds

You can easily leave out the sesame seeds or replace them with a seeds tope or nuts that you aren’t allergic to. Some great sesame seed substitutes for this squash salad recipe could be:

  • Pumpkin seeds
  • Sunflower seeds
  • Peanuts
  • Cashew nuts
  • Salted almonds
  • Walnuts

Instructions

  • Heat olive oil in a frying pan and add the sliced zucchinis. Let the zucchinis cook at medium high heat while stirring occasionally until they are starting to turn golden. Season with salt, thyme and curry powder and stir together.
  • Add the sesame seeds and let everything fry for 1 more minute, before adding the black beans and sun-dried tomatoes.
  • Season the salad with the greek spice mix and add extra salt if needed. Finally add the fresh parsley and mix together to combine. Pour the salad into a salad bowl and serve. Enjoy.

  • 1 tbsp Olive Oil
  • 2 Zucchinis Sliced thinly
  • 2 15-oz cans Black Beans Rinsed and drained
  • 2 cloves Garlic Finely chopped
  • 5-8 Sun dried Tomatoes Chopped
  • 2 tbsp Sesame Seeds
  • 2 tsp Curry Powder
  • 1 tbsp Greek Spice Mix
  • 2 tsp Dried Thyme
  • Salt to taste
  • 1 bunch Fresh Parsley Chopped
