  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) ice water

For the best apple pie filling Filling:

  • 6-7 cups apples ((about 6–7 medium-sized apples) peeled, cored, and thinly sliced (a mix of sweet and tart varieties like Granny Smith and Honeycrisp works well)
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g9 light brown sugar packed
  • 1 tablespoon (15g) all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon (15g) lemon juice

For Assembly:

  • 1 tablespoon (15g) unsalted butter cut into small pieces, regular or vegan butter
  • 1 egg for egg wash, or milk (regular milk, butter milk or plant milk)
  • 1 tablespoon (15g) granulated sugar (for sprinkling on top)
