  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon salt (adjust to taste)

  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3 teaspoons smoked paprika

Instructions

How to make copycat pumfu Instructions:

    Soaking:

    • a. Place the pumpkin seeds in a bowl.
    • b. Cover with 4 cups of water and let them soak for at least 6 hours or overnight.

    Blending:

    • a. Drain and rinse the soaked pumpkin seeds.
    • b. In a blender, combine soaked seeds, 4 cups of water, lemon juice, and salt. (If you’re using the extra spices, add them now).
    • c. Blend until you achieve a smooth, creamy consistency.

    Straining:

    • a. Line a large bowl with cheesecloth or a nut milk bag.
    • b. Pour the blended mixture into the lined bowl.
    • c. Gather the cloth or bag and squeeze to extract the liquid, leaving behind the pulp. You can store the pulp for another cooking venture (it's great in baking or making burger patties etc). You are only using the extracted pumpkin milk to make the pumfu!

      Air Fryer Method:

      • a. Preheat the air fryer to 375°F (190°C).
      • b. Pour the extracted pumpkin liquid/pumpkin milk mixture into an oven-safe dish.
      • c. Air fry for 20-25 minutes, stirring occasionally until it thickens.

      Instant Pot Method:

      • a. Pour the blended pumpkin milk extract/pumpkin liquid into the Instant Pot.
      • b. Set to "Sauté" and stir continuously until it thickens. The milk will start to curdle at 150-160F. Continue to heat to 180F.

          You don’t have to use a tofu press to press the pumfu. You can just as easily get by with a few household items you should already have in your kitchen to make a quick makeshift tofu press 🙂

          Note: the pumfu does need to be pressed firmly for about two hours to get a firm sliceable texture.

          Here’s a quick guide for pressing pumpkin tofu using a cheesecloth:

          Materials Needed:

          • Cheesecloth
          • Heavy objects (e.g., books, cans, a heavy iron pot etc)
          • Cutting board or flat surface
          • Plate or shallow dish

          Steps:

          1. Wrap the Tofu:
          • Place your block of pumpkin tofu in the center of a large piece of cheesecloth.
          • Fold the cheesecloth tightly around the tofu, ensuring all sides are covered.
          2. Prepare the Pressing Area:
          • Set a cutting board or a flat surface where the pumfu will be pressed.
          • Place a plate or shallow dish on the cutting board to catch any liquid.
          3. Press the pumfu:
          • Put the wrapped pumfu on the plate.
          • Place another flat surface, like another plate or cutting board, on top of the tofu.
          4. Add Weight:
