Easy Grilled Cheese Plum Sandwich (vegan)
This delicious cheesy plum sandwich recipe is amazing as a quick and tasty lunch…and works great as a breakfast, too. Imagine crispy golden toast with melting cheese accompanied by the sweetness of the plums. It’s so incredibly tasty…in fact it tastes almost like a dessert, but it’s actually fairly healthy.
These amazing sandwiches can easily be made vegan by using cashew cheese or your favourite vegan cheese.
This cheese-filled plum sandwich never fails to impress. It’s my quick go-to breakfast or lunch recipe for when I want to impress. Because it’s so quick to make (barely takes 15 minutes) and tastes amazing, it’s a great recipe to add a little spice to your day.

Cheesy vegan sandwich hack
If you’re making this plum sandwich in a vegan version and you want to add even more cheesy flavours to it, you can sprinkle a little nutritional yeast over the vegan cheese. It will add an extra decadent cheese layer to the sandwich…plus, extra vitamins and nutrients. It’s a win-win.
What cheese can I use
You can use any type of cheese that has a good melting quality to it. I like to use cashew cheese, but you can use any type of cheese you prefer – or several types of cheeses if you are feeling like spoiling yourself.
Gluten free sandwich option
If you need a gluten-free sandwich, fear not. Just bake your favourite gluten-free toast or buy a loaf of gluten-free toast from the grocery store and you should be good to go.
Extra note: if you have gluten allergy you should also check the cheese you are using in this recipe to make sure it’s gluten free and safe for you to eat.

- Place two slices of toast on a plate and spread red pesto over the bread and top with cheese. Next, place the sliced plums on top and season with dried thyme, pepper and salt. Place a slice of toast on top to make sandwiches and brush the sandwiches with olive oil.
- Grill the sandwiches either on a pan or in a grill for 2-3 minutes on each side or until the toast is golden and the cheese has melted.
- Remove from the heat and allow the cheese to cool down for a couple of minutes before serving. Enjoy.

- 2 tbsp Olive Oil
- 4 Slices of Toast regular or gluten-free
- 2 tbsp Red Pesto Vegan
- 4 big Slices of Vegan Cheese or your favorite cheese
- 1-2 Plums Thinly sliced
