These delicious and easy to make oven roasted healthy carrot fries are the ideal guilty pleasure. They go well with almost any main dish and the seasoning can be customised to fit your favourite flavours. These vegan carrot fries are ready in 45 minutes or less and they are a great and healthy alternative to regular fries. 

I’m always amazed at how versatile carrots are. It seems like there’s nothing carrots cannot do well. And that includes turning them into delicious, golden and slightly crunchy fries. 

You can easily serve these carrot fries with a side of ketchup or my favorite dip. 

Should you peel your carrots?

The answer to that is, you really don’t have to. It all depends on your personal preference and how nice the carrots look. If your carrots have thick skin, I might recommend peeling them because carrot skin is thicker and will make the fries more chewy. But you can easily leave the carrot skins on and just bake the carrots for a few more minutes. 

Need a little cheese on your Oven Roasted Carrot Fries?

If I’m in the mood for a cheesy taste, I like to add a tablespoon of nutritional yeast to the spices. It adds extra health benefits and gives a hint of cheesiness that I adore. 

But if you’re not vegan, you could use grated parmesan cheese and sprinkle that on top of the carrots. It’s so incredibly tasty and will make the carrot fries extra crispy.

You can serve carrot dries as a side to almost any main course. Serve them as a healthy alternative to regular fries, as a side to burgers, with a dip or serve as a healthy snack.

Instructions

  • Preheat your oven to 425F and line a baking tray with baking parchment.
  • Cut the carrots in half and slice them into French fry sized slices.
  • Next, spread the sliced carrots out on the baking sheet and drizzle olive oil and seasoning on top. Use two spoons (or your hands) to toss everything together until all the carrots are coated with seasoning. Spread the carrots out evenly on the baking sheet. 
  • Bake the carrots in the middle of the oven for 20 minutes before flipping them over and letting them bake another 10 minutes or until the carrots are golden brown and a little crispy on the outside.

  • 1 tbsp Dried Thyme
  • 1 tbsp Smoked Paprika
  • 3 tsp Herb Salt
  • 1 tsp Garlic Powder
